Kale (Tuscon cabbage)
You could say, Kale (Tuscon cabbage) is a super food!
This vegetable belongs to the cruciferae family which are a variety of leafy cabbages such as cauliflower, brussel sprouts, broccoli and so on.
But unlike cauliflower and broccoli, it does not develop a central head but grows long crunchy, curled dark green leaves.
The name derives from the botanic greek word “Kaulos”, which means “stem”.
It is also called “pen cabbage”, “palm cabbage”, or “Tuscon cabbage, where it is widely used in healthy and delicious recipes.
Nutritional benefits
Kale (black cabbage) has a great form of beneficial substances, a precious source of mineral salts, including calcium, potassium, magnesium, iron, zinc, phosphorus, copper, sodium, sulfur, manganese, flourine, and selenium.
As for vitamins, it includes vitamin A, B1, B2, B3, B6, B12, C and K.
There are other good reasons to love it, it provides approximately 49 calories per 100 grams of product, and it has decongestant, purifying, diuretic, antioxidant properties.
You can put kale (Tuscan cabbage) in smoothies, steam it, and even air/oven dry it to make it crispy.
